- MACERATION: Long maceration ( over 18 days) with controlled temperature between 21-27 ° C.
- GASTRONOMY: Appetizer or paired with vegetables, red meat, game , cheese , ham and pate .
- SENSATIONS: WOS parenting comes from old vines in privileged altitudes ( 600-800m ) , a hallmark of a small, single region of Rioja. It is an elegant combination of acidity and aromatic fruit , mineral and herbal notes expressing this particular terroir.
